Ingredients

Scale
  • 23 boneless, skinless chicken breasts (cut into strips or bite-sized chunks)
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 34 cloves garlic, minced
  • ½ cup sun-dried tomatoes (preferably packed in oil, sliced)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • 8 oz penne pasta
  • Fresh basil, chopped (for garnish)

Instructions

  1. Season the Chicken: Pat the chicken dry and season with salt, pepper, paprika, and garlic powder.
  2. Sear the Chicken: Heat olive oil in a large skillet and sear the chicken on both sides until golden brown. Remove and set aside.
  3. Sauté Aromatics: In the same skillet, sauté minced garlic until fragrant, then add sun-dried tomatoes.
  4. Build the Sauce: Pour in chicken broth, simmer briefly, then stir in heavy cream, Parmesan, Italian seasoning, and red pepper flakes.
  5. Cook the Pasta: Meanwhile, cook penne pasta according to package instructions until al dente. Reserve some pasta water.
  6. Combine: Add cooked pasta and chicken to the sauce. Toss gently to coat. Add reserved pasta water if needed to thin the sauce.
  7. Garnish: Top with fresh basil and serve immediately with extra Parmesan.
