2 boneless skinless chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

3 cloves garlic, minced

1/3 cup sun-dried tomatoes, chopped

1 1/2 cups chicken broth

3/4 cup heavy cream

1/2 cup grated parmesan cheese

1 cup orzo pasta

1/4 teaspoon red pepper flakes (optional)

2 tablespoons fresh chopped basil or parsley


Instructions

1. Slice chicken breasts in half if thick, pat dry, and season with salt and pepper.

2. Heat olive oil in a large skillet over medium-high and sear chicken 4–5 minutes per side until golden. Remove and set aside.

3. Reduce heat to medium. Add garlic and sauté 30 seconds, then stir in sun-dried tomatoes for another minute.

4. Pour in chicken broth, scraping up any browned bits from the pan. Bring to a simmer.

5. Stir in heavy cream and orzo. Simmer gently for 8–10 minutes, stirring often, until orzo is tender.

6. Add parmesan cheese, stir until melted. Return chicken to pan and cook another 2–3 minutes.

7. Sprinkle with red pepper flakes and fresh herbs. Serve warm.


Notes

Let the dish rest off heat for a few minutes before serving to help thicken the sauce.

Stir the orzo regularly while simmering to avoid sticking.
