2 cups shredded cooked chicken

1 pound potato gnocchi

1/2 cup chopped sun-dried tomatoes

2 cups fresh spinach

4 cloves garlic, minced

1 small yellow onion, chopped

4 cups chicken broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tablespoon Italian seasoning

1/4 teaspoon red pepper flakes (optional)

2 tablespoons olive oil

Salt and pepper to taste


Instructions

1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, cooking for 3–4 minutes until soft and fragrant.

2. Stir in sun-dried tomatoes, Italian seasoning, and red pepper flakes. Sauté for another minute.

3. Pour in chicken broth and deglaze the pot. Bring to a gentle simmer.

4. Add gnocchi and shredded chicken. Simmer for 4–5 minutes until gnocchi is tender and floating.

5. Lower the heat and stir in heavy cream. Add spinach and cook for 2–3 minutes until wilted.

6. Stir in Parmesan cheese, season with salt and pepper to taste, and let simmer for 1–2 more minutes. Serve hot.


Notes

Use rotisserie chicken to save time and add flavor.

Freshly grate the Parmesan for the best melt and taste.

Add spinach at the end to avoid overcooking and keep it vibrant.
