Ingredients

3 cups all-purpose flour

1 packet active dry yeast

1/4 cup granulated sugar

1/2 teaspoon salt

1 cup whole milk (infused with Earl Grey)

2 tablespoons Earl Grey tea (steeped and ground)

1/4 cup unsalted butter (melted)

1 large egg

1/2 cup brown sugar

1 tablespoon ground Earl Grey tea (for filling)

1/4 cup unsalted butter (softened for filling)

1 cup powdered sugar

1/2 teaspoon vanilla extract

12 tablespoons brewed Earl Grey tea (for glaze)

Pinch culinary lavender (optional)


Instructions

1. Steep 2 teaspoons of Earl Grey tea in 1 cup warm milk for 10 minutes, then strain and let cool to lukewarm.

2. In a bowl, mix flour, yeast, sugar, and salt. Add the cooled tea-infused milk, egg, and melted butter. Stir to combine.

3. Knead the dough on a floured surface for 8–10 minutes until soft and elastic. Add flour if needed.

4. Place dough in a greased bowl, cover, and let rise in a warm place for 1 to 1.5 hours until doubled.

5. Mix brown sugar, ground tea, and softened butter for the filling.

6. Roll the dough into a 12×18 inch rectangle. Spread the filling mixture evenly over the surface.

7. Roll up the dough tightly and slice into 10–12 pieces. Place in a greased baking dish.

8. Cover and let rise again for 30–40 minutes until puffy.

9. Bake at 350°F (175°C) for 22–25 minutes until golden.

10. Whisk powdered sugar, brewed tea, vanilla, and lavender to make the glaze.

11. Drizzle glaze over slightly cooled rolls and serve.


Notes

Let the milk cool to lukewarm before adding to the dough so it doesn’t kill the yeast.

For stronger flavor, grind loose leaf Earl Grey slightly but avoid turning it to powder.

Add glaze while the rolls are still warm so it melts into the layers.
