Meatloaf Base:

- 1 cup breadcrumbs
- 1 egg
- 1/2 cup milk
- 1/2 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried parsley (optional)
Mashed Potato Layer:
- 3 cups mashed potatoes (from 4–5 Russet potatoes)
- 4 tbsp butter
- 1/4 cup milk or cream
- Salt and pepper, to taste
Toppings:
- 1 1/2 cups shredded cheddar cheese
- 5 slices bacon, cooked and crumbled
- 2 tbsp chopped green onions or chives
- Optional: 2 tbsp sour cream
Instructions
- Preheat oven to 375°F (190°C).
- Boil peeled potatoes in salted water until fork-tender, then mash with butter and milk. Set aside.
- Cook bacon in a skillet until crispy; set aside and crumble.
- In a large bowl, mix together ground beef, breadcrumbs, egg, milk, onion, garlic, Worcestershire sauce, salt, pepper, and parsley.
- Press meat mixture evenly into a greased 9×13 baking dish. Bake for 20 minutes.
- Spread mashed potatoes evenly over the meat layer.
- Top with shredded cheddar cheese and crumbled bacon.
- Return to oven and bake for 15–20 more minutes, or until cheese is melted and bubbly.
