Ingredients
1 tablespoon olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
1 lb ground beef
2 teaspoons chili powder
1 teaspoon cumin
1/2 teaspoon smoked paprika
Salt and pepper to taste
1/2 cup tomato sauce
1/4 cup beef broth
1/2 cup canned green chilies (optional)
1/2 cup black beans (optional)
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups milk
2 cups shredded cheddar cheese
1/2 teaspoon garlic powder
Salt and pepper to taste
8 to 10 flour tortillas (8-inch)
1 cup shredded Monterey Jack or cheddar cheese
Fresh cilantro, chopped
Sour cream, lime wedges, chopped red chili (optional)
Instructions
1. Heat olive oil in a skillet and sauté onion until translucent. Add garlic and cook briefly.
2. Add ground beef and cook until browned. Drain excess fat.
3. Stir in chili powder, cumin, paprika, tomato sauce, beef broth, salt, pepper. Simmer for 5–7 mins.
4. Add green chilies and black beans if using. Remove from heat.
5. For the cheese sauce: melt butter, whisk in flour, cook 1 minute. Gradually whisk in milk.
6. Stir until thickened. Remove from heat and add cheese, garlic powder, salt, and pepper.
7. Warm tortillas until soft.
8. Add beef mixture to tortillas, roll them up, and place seam-side down in baking dish.
9. Pour cheese sauce over enchiladas, spread evenly.
10. Top with shredded cheese. Cover and bake at 375°F for 20 mins.
11. Remove foil and bake an additional 10 mins until bubbly and golden.
12. Rest for 5 mins, garnish with cilantro, sour cream, and lime wedges.
