3/4 cup granulated sugar

2 large eggs

1 cup plain full-fat yogurt

1/2 cup vegetable oil

1 teaspoon vanilla extract

1 teaspoon lemon zest (optional)


Instructions

1. Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.

2. In a medium bowl, whisk together the flour, baking powder, and salt.

3. In a large bowl, whisk the sugar and eggs until pale and slightly thick.

4. Add the yogurt, vegetable oil, vanilla extract, and lemon zest. Stir until smooth.

5. Fold in the dry ingredients in two batches, mixing gently to avoid overworking the batter.

6. Pour the batter into the prepared pan and smooth the top.

7. Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.

8. Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

Notes
