2 tablespoons poppy seeds

1/2 cup cold unsalted butter, cut into cubes

2/3 cup cold buttermilk

1 large egg

1 teaspoon lemon zest

1 tablespoon fresh lemon juice

1/2 cup powdered sugar

2 teaspoons fresh lemon juice

1/4 teaspoon lemon zest


Instructions

1. Preheat the oven to 400°F (200°C).

2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and poppy seeds.

3. Add the cold butter and cut it into the flour mixture using a pastry cutter or fork until it resembles coarse crumbs.

4. In a separate bowl, whisk together the buttermilk, egg, lemon zest, and lemon juice.

5. Pour the wet ingredients into the dry ingredients and stir until just combined.

6. Turn the dough out onto a lightly floured surface and gently press it into a 1-inch thick disk.

7. Using a sharp knife, cut the dough into 8 wedges.

8. Place the scones on a parchment-lined baking sheet and chill for 20 minutes in the fridge.

9. Bake for 18-20 minutes or until golden brown.

10. While the scones are baking, prepare the glaze by whisking together the powdered sugar, lemon juice, and lemon zest.

11. Drizzle the glaze over the scones once they have cooled slightly.
