- 2 lbs chicken wings (drumettes and flats, tips removed)
- 1 tablespoon baking powder (aluminum-free)
- 1 tablespoon olive oil
- 1 1/2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon lemon zest (from 1–2 fresh lemons)
- 1 tablespoon lemon juice (optional)
- 1 tablespoon chopped fresh parsley (optional, for garnish)
- Lemon slices (optional, for serving)
Instructions
- Preheat oven to 425°F (220°C) or air fryer to 400°F (200°C). Line a baking sheet with foil and set a wire rack on top.
- Pat chicken wings dry with paper towels.
- In a large bowl, toss wings with baking powder, salt, garlic powder, onion powder, and olive oil until evenly coated.
- Arrange wings on the rack in a single layer. Bake for 45–50 minutes, flipping halfway, or air fry in batches for 22–25 minutes.
- While wings cook, mix lemon zest, black pepper, and optional lemon juice in a small bowl.
- Toss hot, cooked wings with the lemon pepper mixture.
- Garnish with parsley and lemon slices if desired. Serve immediately.
