Description

Lemon Meltaways are no-bake citrus treats that truly live up to their name—light, buttery, and delicately tangy with fresh lemon juice and zest. These bite-sized sweets are perfect for spring gatherings, gifting, or a refreshing after-dinner dessert. They melt on your tongue, leaving behind a sweet burst of sunshine.


Ingredients

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup powdered sugar, divided (¾ cup for mixture, ¼ cup for dusting)
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt

 

  • 1 1/4 cups cornstarch, sifted

Instructions

  1. In a mixing bowl, cream the softened butter with ¾ cup powdered sugar until smooth.
  2. Add lemon juice, lemon zest, vanilla extract, and salt. Stir until fully combined.
  3. Gradually fold in sifted cornstarch until the mixture is smooth and holds shape.
  4. Spoon into silicone molds, pressing gently to smooth the tops.
  5. Refrigerate for at least 2 hours or freeze for 45–60 minutes until firm.
  6. Gently unmold the meltaways and place on a tray.
  7. Dust lightly with remaining powdered sugar before serving.
  8. Store in fridge for up to 7 days or freeze for up to 2 months.
