- 1 cup powdered sugar, divided (¾ cup for mixture, ¼ cup for dusting)
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1 1/4 cups cornstarch, sifted
Instructions
- In a mixing bowl, cream the softened butter with ¾ cup powdered sugar until smooth.
- Add lemon juice, lemon zest, vanilla extract, and salt. Stir until fully combined.
- Gradually fold in sifted cornstarch until the mixture is smooth and holds shape.
- Spoon into silicone molds, pressing gently to smooth the tops.
- Refrigerate for at least 2 hours or freeze for 45–60 minutes until firm.
- Gently unmold the meltaways and place on a tray.
- Dust lightly with remaining powdered sugar before serving.
- Store in fridge for up to 7 days or freeze for up to 2 months.
