2 chicken breasts

2 teaspoons Cajun seasoning

3 garlic cloves, minced

1 cup heavy cream

¾ cup freshly grated Parmesan cheese

8 ounces rotini pasta

2 tablespoons chopped fresh parsley

½ teaspoon salt

¼ teaspoon black pepper


Instructions

1. Cut chicken into bite-sized chunks and pat dry. Toss with olive oil, Cajun seasoning, salt, pepper, and lemon juice. Let marinate for 10 minutes.

2. Heat 1 tablespoon of butter and olive oil in a skillet over medium-high heat. Sear chicken in a single layer for 3–4 minutes per side until golden and cooked through. Remove and set aside.

3. Cook rotini pasta in salted boiling water until al dente (about 8–10 minutes). Reserve ½ cup of pasta water, then drain.

4. In the same skillet, melt 2 tablespoons butter and sauté garlic until fragrant, about 30 seconds. Add heavy cream and simmer for 2–3 minutes.

5. Stir in Parmesan cheese until melted and smooth.

6. Add cooked pasta to the sauce, using reserved pasta water to loosen if needed.

7. Toss in fresh parsley and mix well.
