- 2 salmon fillets (skin-on, about 6 oz each)
- 1/2 lb baby potatoes, halved
- 2 cups broccoli florets
- 2 tablespoons olive oil (divided)
- 2 tablespoons unsalted butter
- 2 garlic cloves, minced
- Juice and zest of 1 lemon
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 425°F (220°C).
- Toss halved baby potatoes with 1 tablespoon olive oil, salt, and pepper. Roast on a baking sheet for 15 minutes.
- Add broccoli florets to the baking sheet, drizzle with remaining olive oil, season, and roast another 15–18 minutes until golden and tender.
- Meanwhile, pat salmon dry and season with salt and pepper.
- Heat a skillet over medium-high heat. Add a little olive oil and sear salmon skin-side down for 4–5 minutes. Flip and cook another 2–3 minutes.
- In a small saucepan, melt butter over low heat. Add garlic and cook 30 seconds. Stir in lemon juice and zest. Simmer 1 minute, then remove from heat.
- Plate salmon with roasted veggies and spoon lemon butter sauce over the top. Garnish with fresh parsley if desired.
