12 oz penne pasta

1 lb large shrimp, peeled and deveined

1 tablespoon olive oil

2 tablespoons butter

4 cloves garlic, minced

1/3 cup sun-dried tomatoes, chopped

1/2 cup chicken broth

1 cup heavy cream

3/4 cup parmesan cheese, freshly grated

1 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes

Salt, to taste

Black pepper, to taste

2 tablespoons parsley, chopped

3 slices bacon, cooked and crumbled


Instructions

1. Bring a large pot of salted water to a boil and cook penne pasta until al dente. Drain and set aside, reserving 1/2 cup pasta water.

2. Heat olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper, then sear for 1–2 minutes per side until golden and cooked through. Remove and set aside.

3. In the same skillet, reduce heat to medium. Add butter, garlic, and sun-dried tomatoes. Sauté for 1–2 minutes until fragrant.

4. Pour in chicken broth and simmer for 2–3 minutes. Add heavy cream, parmesan, Italian seasoning, red pepper flakes, salt, and pepper. Simmer for 3–5 minutes until thickened.

5. Return shrimp to skillet and stir to coat in the sauce. Simmer for 1–2 minutes more.

6. Add cooked pasta and toss to combine. Use reserved pasta water to adjust sauce consistency if needed.

7. Top with parsley and crumbled bacon. Serve immediately with extra parmesan if desired.
