Ingredients
8 oz cream cheese, softened
1 cup shredded cheddar cheese
6 slices cooked bacon, crumbled
2 fresh jalapeños, finely chopped
3 green onions, thinly sliced
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
12 egg roll wrappers
Oil for frying
Instructions
1. In a mixing bowl, combine the cream cheese, shredded cheddar, crumbled bacon, chopped jalapeños, green onions, garlic powder, salt, and pepper. Mix until smooth.
2. Lay egg roll wrappers on a clean surface. Spoon 2 tablespoons of filling in the center of each and shape it into a log.
3. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the top edge with a little water.
4. Heat 2 inches of oil in a deep skillet to 350°F (175°C).
5. Fry 3–4 egg rolls at a time for 3–4 minutes, turning until golden brown.
6. Remove and drain on paper towels. Let cool for a few minutes before serving.
Notes
Let the cream cheese sit at room temperature before mixing to make it easier to blend.
Don’t overfill the wrappers—2 tablespoons is just right to prevent bursting.
To bake instead of fry, brush egg rolls with oil and bake at 400°F for 15–20 minutes, flipping halfway.
