Ingredients

  • 1 lb (450g) large shrimp, peeled and deveined
  • 1 tbsp olive oil or butter
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 jalapeño, sliced (remove seeds for less heat)
  • 1 medium tomato, chopped
  • 1 celery stalk, chopped
  • 4 cups seafood or chicken broth
  • 1 cup coconut milk or heavy cream (optional)
  • 1/2 tsp smoked paprika
  • 1/4 tsp ground cumin
  • 1/2 tsp chili powder (optional)
  • Salt and black pepper, to taste
  • Juice of 1/2 lime
  • 1/4 cup chopped cilantro
  • 1 tbsp chopped parsley (optional)

Instructions

  1. Heat olive oil or butter in a large pot over medium heat.
  2. Add onion, garlic, jalapeño, and celery. Cook until onion is translucent.
  3. Stir in tomato, paprika, cumin, and chili powder. Cook 3–4 minutes.
  4. Pour in broth. Bring to a boil, then simmer for 10–12 minutes.
  5. Add coconut milk or cream if using. Simmer 3–5 more minutes.
  6. Add shrimp and cook 2–3 minutes until pink and opaque.
  7. Remove from heat. Stir in lime juice, cilantro, and parsley.
  8. Taste and adjust seasoning. Serve hot.
