- 1 lb (450g) large shrimp, peeled and deveined
- 1 tbsp olive oil or butter
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 jalapeño, sliced (remove seeds for less heat)
- 1 medium tomato, chopped
- 1 celery stalk, chopped
- 4 cups seafood or chicken broth
- 1 cup coconut milk or heavy cream (optional)
- 1/2 tsp smoked paprika
- 1/4 tsp ground cumin
- 1/2 tsp chili powder (optional)
- Salt and black pepper, to taste
- Juice of 1/2 lime
- 1/4 cup chopped cilantro
- 1 tbsp chopped parsley (optional)
Instructions
- Heat olive oil or butter in a large pot over medium heat.
- Add onion, garlic, jalapeño, and celery. Cook until onion is translucent.
- Stir in tomato, paprika, cumin, and chili powder. Cook 3–4 minutes.
- Pour in broth. Bring to a boil, then simmer for 10–12 minutes.
- Add coconut milk or cream if using. Simmer 3–5 more minutes.
- Add shrimp and cook 2–3 minutes until pink and opaque.
- Remove from heat. Stir in lime juice, cilantro, and parsley.
- Taste and adjust seasoning. Serve hot.
