Ingredients
113g mascarpone cheese
60g powdered sugar
2 tbsp cooled espresso or strong coffee
1/2 tsp vanilla extract
80g ladyfinger crumbs (or similar cookie)
200g dark or semi-sweet chocolate, for coating
1 tbsp cocoa powder, for dusting
Instructions
1. In a large mixing bowl, combine mascarpone cheese, powdered sugar, espresso, and vanilla extract. Mix until smooth and creamy.
2. Add crushed ladyfinger crumbs to the mixture and stir until it forms a soft dough. Chill for 30 minutes.
3. Scoop and roll the mixture into balls. Place on a parchment-lined tray and freeze for 20–30 minutes.
4. Melt chocolate in a microwave or double boiler until smooth.
5. Dip each chilled ball into melted chocolate, shake off excess, and return to the tray.
6. Dust with cocoa powder while the chocolate is still wet.
7. Chill the coated truffles for 15 minutes or until the chocolate sets.
8. Serve chilled or at room temperature.
Notes
Let the espresso cool completely before mixing to avoid melting the mascarpone.
If the chocolate is too thick, add a little coconut oil to thin it.
