1.5 lbs boneless skinless chicken thighs or breasts

1.5 tbsp Cajun seasoning

1 tbsp olive oil

Salt and pepper to taste

2 tbsp hot honey

1 tbsp unsalted butter

8 oz rotini pasta

1.5 tbsp unsalted butter

3 garlic cloves minced

1.25 cups heavy cream

0.5 cup crumbled feta cheese

0.25 cup grated Parmesan

0.25 cup fresh basil leaves finely chopped

Salt and black pepper to taste

1.5 cups Brussels sprouts finely shaved or sliced

1 tbsp olive oil

Salt to taste

Fresh chopped parsley or chives

Drizzle of hot honey


Instructions

1. Toss chicken with Cajun seasoning, olive oil, salt, and pepper. Marinate for at least 30 minutes.

2. Preheat oven to 400°F (200°C). Toss shaved Brussels sprouts with olive oil and salt. Spread on parchment-lined sheet and roast for 15–20 minutes, flipping halfway. Set aside.

3. Cook rotini pasta in salted boiling water until al dente. Reserve ½ cup pasta water, then drain and set aside.

4. In a saucepan, melt butter over medium heat. Sauté garlic for 1–2 minutes. Add heavy cream and bring to a simmer. Stir in feta and Parmesan until smooth, then add basil, salt, and pepper.

5. Toss in cooked pasta and stir until evenly coated. Use reserved pasta water to loosen sauce if needed.

6. In a hot skillet, sear chicken pieces until browned and cooked through. Reduce heat, add butter and hot honey, and toss to coat.

7. Plate the pasta, top with glazed chicken, and scatter crispy Brussels chips on top. Garnish and drizzle extra hot honey if desired.
