2 boneless skinless chicken breasts or thighs

2 tablespoons hot honey

1 ½ tablespoons balsamic vinegar

2 cloves garlic minced

2 tablespoons olive oil divided

2 cups Brussels sprouts halved

1 cup feta cheese block, not crumbled

⅓ cup Greek yogurt or sour cream

1 cup heavy cream

½ cup grated Parmesan cheese

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon chopped parsley optional


Instructions

1. Preheat oven to 425°F (220°C). Halve Brussels sprouts and toss with 1 tablespoon olive oil, salt, and pepper. Roast cut-side down for 20–25 minutes until crispy.

2. In a food processor, blend feta and Greek yogurt until smooth and creamy. Adjust with salt or lemon juice if needed. Chill until serving.

3. Cut chicken into bite-sized pieces. Season with salt and pepper. Heat 1 tablespoon olive oil in a skillet and sear chicken until golden and cooked through, about 7–10 minutes. Remove from skillet.

4. In the same skillet, sauté garlic for 30 seconds. Add hot honey and balsamic vinegar, cooking until slightly reduced and glossy.

5. Return chicken to skillet and toss in the glaze until sticky and caramelized, about 2 minutes.

6. In a separate saucepan, warm heavy cream over medium-low heat. Stir in Parmesan until melted and thickened. Add a spoonful of whipped feta and mix until creamy.

7. Spread whipped feta on plate. Spoon over Alfredo sauce. Top with glazed chicken and crispy Brussels sprouts. Garnish with parsley if desired.
