Ingredients
2 pounds boneless skinless chicken thighs
2 cups jasmine rice
4 cups water
1 tablespoon olive oil
6 cloves garlic minced

1 tablespoon sesame oil
1 cup chicken broth
1 tablespoon cornstarch
2 tablespoons water for cornstarch slurry
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes
3 green onions sliced
1 tablespoon sesame seeds
1 tablespoon lime juice
Instructions
1. Rinse the jasmine rice under cold water until the water runs mostly clear. Cook the rice according to package instructions and fluff with a fork once tender.
2. Pat the chicken dry with paper towels and season both sides with salt and black pepper.
3. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on both sides and fully cooked through.
4. Remove the chicken from the skillet and set aside temporarily.
5. In the same skillet, add minced garlic and grated ginger. Cook for about 1 minute until fragrant.
