1 cup honey

3/4 cup granulated sugar

1/2 cup light brown sugar, packed

1 cup strong brewed black or chai tea, cooled

1/2 cup vegetable oil

3 large eggs, at room temperature

2 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

1/4 teaspoon nutmeg

1 teaspoon vanilla extract

1/2 cup chopped walnuts or almonds (optional)


Instructions

1. Preheat oven to 325°F (160°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

2. Brew strong black or chai tea and allow it to cool completely.

3. In a large bowl, whisk honey, granulated sugar, brown sugar, tea, oil, eggs, and vanilla extract until smooth.

4. In a separate bowl, sift together flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, and nutmeg.

5. Gradually stir the dry mixture into the wet ingredients until just combined. Do not overmix.

6. If using, fold in chopped nuts.

7. Pour the batter into the prepared loaf pan and smooth the top.

8. Bake for 55–65 minutes or until a toothpick comes out clean.

9. Cool in pan for 15 minutes, then transfer to a wire rack to cool completely.

10. Slice once fully cooled and enjoy.
