Homemade Pecan Sandies are rich, buttery cookies with a tender crumb and a satisfying nutty crunch from finely chopped pecans. Perfect for pairing with coffee, tea, or as a gift, these easy-to-make cookies are a delightful addition to any baking repertoire.

- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup powdered sugar
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup finely chopped pecans
- Whole pecan halves (optional, for garnish)
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Cream the butter and powdered sugar in a large mixing bowl using an electric mixer until light and fluffy (about 2–3 minutes). Add vanilla extract and mix briefly.
- In a separate bowl, whisk together flour and salt. Gradually add to the butter mixture, mixing on low speed until combined.
- Fold in the chopped pecans until evenly distributed.
- Scoop tablespoon-sized portions of dough and roll into balls. Place on the prepared baking sheet, spacing about 2 inches apart. Optional: press a whole pecan half on top of each.
- Bake for 15–18 minutes, or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
