  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup finely chopped pecans
  • Whole pecan halves (optional, for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Cream the butter and powdered sugar in a large mixing bowl using an electric mixer until light and fluffy (about 2–3 minutes). Add vanilla extract and mix briefly.
  3. In a separate bowl, whisk together flour and salt. Gradually add to the butter mixture, mixing on low speed until combined.
  4. Fold in the chopped pecans until evenly distributed.
  5. Scoop tablespoon-sized portions of dough and roll into balls. Place on the prepared baking sheet, spacing about 2 inches apart. Optional: press a whole pecan half on top of each.
  6. Bake for 15–18 minutes, or until the edges are lightly golden.
  7. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
