- 2 cups digestive biscuits or graham crackers (crumbled)
- 1/2 cup unsalted butter (melted)
- 2 cups cream cheese (softened)
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup caramel sauce
- 1 cup milk or dark chocolate (melted)
- 2 tbsp heavy cream
Instructions
- Prepare the crust by combining the crushed biscuits with melted butter. Press firmly into the base of a springform pan and chill for 15 minutes.
- In a mixing bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth. Spread over the crust and chill for 2-4 hours or until firm.
- Pour a thick layer of caramel sauce over the cheesecake layer, spreading evenly. Chill for 30 minutes.
- Melt chocolate with heavy cream until smooth and pour over the caramel. Spread evenly and refrigerate for at least 4 hours or overnight.
- Remove from the pan, slice, and serve. Enjoy!
