1 cup unsalted butter, melted

1 ½ cups granulated sugar

2 large eggs

2 tablespoons lemon zest

¼ cup freshly squeezed lemon juice

1 ½ cups all-purpose flour

½ teaspoon salt

1 cup powdered sugar

2 tablespoons lemon juice

1 teaspoon lemon zest (optional for garnish)


Instructions

1. Preheat the oven to 350°F (175°C) and line an 8x8 or 9x9-inch baking pan with parchment paper. Lightly grease it.

2. In a mixing bowl, whisk together melted butter and sugar.

3. Add eggs, lemon zest, and lemon juice. Mix until smooth and glossy.

4. Stir in the flour and salt using a spatula. Do not overmix.

5. Pour the batter into the prepared pan and smooth the top.

6. Bake for 25–30 minutes or until the edges are golden and a toothpick comes out with moist crumbs.

7. Cool in the pan for 10 minutes, then lift out and cool completely on a rack.

8. In a small bowl, whisk powdered sugar and lemon juice until smooth.

9. Spread the glaze over the cooled lemonies evenly.

10. Garnish with additional lemon zest if desired. Let glaze set before slicing.


Notes

Always use fresh lemon juice and zest for the brightest flavor.

Refrigerating before slicing gives cleaner, neater bars.

For a twist, fold in fresh berries or top with crushed pistachios.
