Ingredients

Scale

4 cups chicken broth

2 large eggs

1 tablespoon cornstarch

1 tablespoon water

1/2 teaspoon ground ginger

1/4 teaspoon white pepper

1 tablespoon soy sauce

Salt to taste

2 green onions, thinly sliced

Optional: corn kernels, tofu cubes, baby spinach, sesame oil drizzle

Instructions

1. In a small bowl, mix 1 tablespoon cornstarch with 1 tablespoon water until smooth. Set aside.

2. In a medium saucepan, bring 4 cups of chicken broth to a gentle simmer over medium heat. Stir in 1/2 teaspoon ground ginger, 1/4 teaspoon white pepper, and 1 tablespoon soy sauce. Adjust salt as needed.

3. Stir in the cornstarch slurry and simmer for 1–2 minutes until slightly thickened.

4. Beat 2 eggs in a small bowl until fully blended.

5. Reduce heat to low. Slowly drizzle the beaten eggs into the simmering broth while gently stirring in one direction to form egg ribbons.

6. Turn off heat and add 2 sliced green onions. Stir in any optional add-ins like corn, tofu, or spinach if using.

7. Ladle into bowls, serve hot, and drizzle with sesame oil if desired.

Notes

Always stir in one direction while adding eggs to create smooth, silky ribbons.

Use good quality broth—the better the base, the better the flavor.

Add vegetables or tofu to make it a more filling meal.
