Description
Golden layers of thinly sliced potatoes rest on a bed of perfectly seasoned ground beef, with hints of sweet corn, green beans, and melted cheese tucked in between. This comforting casserole is easy to make, filling, and perfect for family dinners or meal prep.
Ingredients
1 lb ground beef
4–5 medium potatoes, peeled and thinly sliced
1 can (15 oz) corn kernels, drained
1 can (15 oz) green beans, drained
1 medium onion, finely chopped
1 cup shredded cheddar cheese
1/2 cup beef broth
1 can (14 oz) diced tomatoes, undrained
2 cloves garlic, minced
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp salt, or to taste
1/2 tsp black pepper, or to taste
2 tbsp olive oil, for sautéing
1 tbsp butter, for greasing the casserole dish (optional)
Instructions
1. Brown the Ground Beef: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook for 6–8 minutes, breaking it apart with a spatula. Drain excess fat. Add garlic, onion, oregano, thyme, salt, and pepper. Stir and cook for 2 minutes. Add diced tomatoes (with juice) and beef broth, then simmer for 5–7 minutes. Set aside.
2. Prepare the Potatoes: Peel and thinly slice the potatoes evenly using a mandoline or sharp knife. Optional: Microwave the slices for 4–5 minutes for quicker cooking.
3. Layer the Casserole: Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish. Layer half the sliced potatoes at the bottom. Season with salt and pepper. Spread half the beef mixture on top, followed by a layer of corn and green beans. Add the rest of the potatoes, then the remaining beef mixture. Top with shredded cheddar cheese.
4. Bake the Casserole: Cover the dish with aluminum foil and bake for 45 minutes. Remove foil and bake for another 15–20 minutes until potatoes are golden and cheese is bubbling. Let rest for 10–15 minutes before serving.
