  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup corn (optional)
  • 3 tablespoons BBQ sauce
  • 3 tablespoons ranch dressing

Instructions

  1. Season the chicken breasts with olive oil, salt, pepper, garlic powder, and smoked paprika.
  2. Grill, pan-sear, or bake the chicken until fully cooked and the internal temperature reaches 165°F (74°C). Let it rest, then slice.
  3. While the chicken cooks, chop the romaine lettuce, halve the cherry tomatoes, and dice the avocado.
  4. In a large bowl, layer the lettuce, tomatoes, avocado, cheddar cheese, and corn if using.
  5. Add the sliced chicken on top of the bowl.
  6. Drizzle with BBQ sauce and ranch dressing.
  7. Serve immediately or store ingredients separately for meal prep.
