Ingredients

2 cups fresh baby spinach

1/2 cup flat-leaf parsley

1/4 cup fresh chives

2 tablespoons fresh dill

2 garlic cloves

1/2 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

1 tablespoon lemon juice

1/4 cup sour cream

8 oz cream cheese

1/4 cup grated Parmesan cheese

2 tablespoons olive oil


Instructions

1. Wash and dry spinach, parsley, chives, and dill. Peel garlic cloves and prep fresh ingredients.

2. Add spinach, parsley, chives, dill, and garlic to a food processor. Pulse until coarsely chopped.

3. Add cream cheese, sour cream, salt, pepper, and lemon juice. Blend until smooth and creamy.

4. Add Parmesan cheese and olive oil. Blend again, maintaining a bit of texture.

5. Taste and adjust seasoning if needed. Add red pepper flakes or lemon juice to preference.

6. Transfer dip to a bowl, cover, and refrigerate for at least 30 minutes to set and meld flavors.

7. Stir before serving. Garnish with olive oil drizzle, fresh herbs, or crumbled feta.

8. Serve with pita chips, veggie sticks, or use as a spread on sandwiches.


Notes

Use room-temperature cream cheese to achieve a smoother blend and easier mixing.
