Ingredients
1 (6-7 lb) bone-in prime rib roast
6 cloves garlic, minced
3 tablespoons fresh rosemary, finely chopped
2 tablespoons fresh thyme, chopped
2 teaspoons kosher salt
1 teaspoon cracked black pepper
2 tablespoons Dijon mustard
1/2 cup unsalted butter, softened
1 tablespoon olive oil
(Optional) 1 tablespoon prepared horseradish or 1 teaspoon Worcestershire sauce
Instructions
1. Remove the roast from the fridge and let it sit at room temperature for 2 hours. Pat dry with paper towels.
2. In a bowl, combine butter, garlic, rosemary, thyme, salt, pepper, Dijon mustard, and olive oil. Mix into a thick paste.
3. If using horseradish or Worcestershire, mix it into the paste.
4. Rub the herb mixture generously over the entire roast, including the sides and between the bones.
5. Preheat the oven to 450°F (230°C). Place the roast bone-side down on a rack in a roasting pan.
6. Roast at 450°F for 20 minutes to create a golden crust.
7. Reduce oven temperature to 325°F (160°C) and continue roasting until internal temperature reaches desired doneness (120°F rare, 130°F medium-rare, 140°F medium).
8. Remove from oven and tent with foil. Let rest for 20–30 minutes before carving.
9. Slice between the bones or into thick slabs and serve with your favorite sides.
Notes
Letting the roast rest after cooking is crucial—it keeps it juicy and flavorful.
Always use a meat thermometer for accurate doneness and stress-free cooking.
You can prep the herb crust the night before for even more developed flavor.
