Ingredients
1 lb ground beef
6 slices bacon chopped
1 medium onion diced
3 cloves garlic minced
1 can 15 oz kidney beans drained and rinsed
1 can 15 oz pinto beans drained and rinsed
1 can 15 oz navy beans drained and rinsed
1 can 15 oz butter beans drained and rinsed
1 can 14.5 oz diced tomatoes
1/2 cup barbecue sauce
1/4 cup ketchup
2 tablespoons brown sugar
1 tablespoon yellow mustard
1 teaspoon smoked paprika
1 teaspoon chili powder
1/2 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon cayenne pepper optional
1/2 cup beef broth
Instructions
1. Cook chopped bacon in a skillet over medium heat until crispy, then remove and set aside while keeping a small amount of grease in the pan.
2. Add ground beef to the same skillet and cook until browned, breaking it apart as it cooks. Drain excess grease.
3. Stir in diced onion and cook until softened, then add minced garlic and cook briefly until fragrant.
4. Transfer the meat mixture into the slow cooker.
5. Add all drained and rinsed beans along with diced tomatoes.
6. Pour in barbecue sauce, ketchup, and beef broth.
7. Add brown sugar, mustard, smoked paprika, chili powder, salt, pepper, and cayenne if using.
8. Stir everything thoroughly until well combined.
9. Cover and cook on low for 6–8 hours or high for 3–4 hours.
10. Taste and adjust seasoning if needed, then let rest briefly before serving.
Notes
Browning the meat and bacon first adds a deep, rich flavor that enhances the final dish.
Rinsing canned beans helps control salt levels and keeps the sauce from becoming too thick or starchy.
Letting the beans rest before serving allows the sauce to thicken and flavors to fully develop.
