- 1 small onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 medium potatoes, peeled and diced
- 1 can (14.5 oz) diced tomatoes (with juice)
- 4 cups beef broth (low-sodium preferred)
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp Italian seasoning
- 1/2 tsp salt (adjust to taste)
- 1/2 tsp black pepper
- 1 bay leaf (optional)
- Fresh parsley for garnish (optional)
Instructions
- In a large pot over medium heat, cook the ground beef until browned, breaking it apart with a spoon. Drain excess fat if needed.
- Add the diced onion, minced garlic, carrots, and celery. Sauté for 3-4 minutes until the vegetables begin to soften.
- Stir in the diced tomatoes, tomato paste, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix well.
- Pour in the beef broth and add the diced potatoes and bay leaf (if using). Stir everything together and bring to a boil.
- Reduce heat to low and let the soup simmer for 25-30 minutes, or until the potatoes and vegetables are tender.
- Remove the bay leaf and adjust seasoning if needed. Serve hot, garnished with fresh parsley if desired. Enjoy!
