Ingredients

Scale

5 cups watermelon, seedless and cubed

1 tablespoon freshly squeezed lime juice

1/4 teaspoon sea salt

Fresh mint leaves for garnish

1 tablespoon coconut milk (optional)


Instructions

1. Cut the seedless watermelon into small cubes, remove any seeds, and freeze the cubes on a tray for 3–4 hours until solid.

2. Add the frozen watermelon cubes to a high-speed blender or food processor. Blend until smooth, scraping the sides as needed.

3. Add lime juice and sea salt to the mixture. Blend again briefly to incorporate.

4. Transfer the blended mixture to a freezer-safe container. Smooth the top and seal it. Freeze for 1–2 hours for soft-serve, or 4 hours for firmer scoops.

5. Let it sit at room temperature for 5–10 minutes if needed before scooping. Serve with mint leaves or lime wedges for garnish.


Notes

1. Choose a watermelon that is very ripe and naturally sweet to avoid the need for added sugar.

2. For a smoother texture, you can strain the blended mixture before freezing.
