3 medium carrots, sliced
3 celery stalks, chopped
1/2 head green cabbage, chopped
1 can (14.5 oz) diced tomatoes with juice
6 cups low-sodium vegetable broth
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon smoked paprika
Salt and black pepper, to taste
1 tablespoon lemon juice or apple cider vinegar (optional)
Fresh parsley, chopped, for garnish
Instructions
1. Heat olive oil in a large soup pot over medium heat. Add the chopped onion and cook for 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.
