1 1/4 cups all-purpose flour

1 1/2 teaspoons baking powder

1/4 teaspoon nutmeg

1/3 cup coconut sugar

2 eggs

1/2 cup milk (any kind)

1 teaspoon vanilla extract

2 tablespoons coconut oil (melted)

1/4 cup cinnamon sugar (optional topping)


Instructions

1. Preheat oven to 350°F (175°C) and grease a donut pan.

2. If using fresh squash, roast peeled cubes at 400°F for 25 minutes and puree until smooth. Let cool.

3. In a mixing bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.

4. In a separate bowl, whisk the squash puree, eggs, coconut sugar, milk, vanilla, and melted coconut oil.

5. Combine wet and dry ingredients, folding gently until just mixed.

6. Pipe or spoon batter into the donut pan, filling each mold about 3/4 full.

7. Bake for 12–15 minutes or until a toothpick comes out clean.

8. Cool in pan for 5 minutes, then transfer to a rack. Sprinkle with cinnamon sugar if desired.


Notes

Make sure your squash puree is thick and not watery for the best donut texture.
