Ingredients
4 medium Yukon Gold or Russet potatoes
4 tablespoons unsalted butter, melted
2 tablespoons olive oil
4 garlic cloves, minced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoon fresh rosemary, finely chopped
2 tablespoons grated Parmesan cheese (optional)
Flaky sea salt, for finishing
Instructions
1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with oil. Wash and dry the potatoes thoroughly.
2. Place a potato between two chopsticks or wooden spoon handles. Slice the potato crosswise into thin slices, about 1/8 inch apart, without cutting all the way through. Repeat with all potatoes.
3. Mix melted butter, olive oil, minced garlic, salt, pepper, and rosemary in a bowl. Use a pastry brush to generously coat each potato, ensuring the mixture reaches the crevices. Place them on the baking sheet.
4. Roast for 30 minutes. Remove from oven and baste again with the butter mixture. Add optional whole garlic cloves to the pan. Return to oven and bake another 20–25 minutes until crispy outside and tender inside.
5. Remove and immediately sprinkle with Parmesan if using. Finish with flaky sea salt and garnish with rosemary. Serve hot.
