  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 small bell pepper, diced (optional)
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • ½ cup chicken broth
  • 1 tsp paprika
  • ½ tsp cumin
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper
  • Fresh parsley or cilantro, for garnish

Instructions

  1. Heat 1 tbsp olive oil in a large skillet over medium heat. Add the ground turkey, season with salt, black pepper, and cumin, and cook until browned. Once cooked, remove from the skillet and set aside.
  2. In the same skillet, add the remaining 1 tbsp olive oil and sauté the diced onion and bell pepper for about 2-3 minutes, until softened. Add the minced garlic and cook for another 30 seconds.
  3. Add the diced sweet potatoes, chicken broth, tomato paste, and paprika, stirring well to coat everything. Cover and cook for 10-15 minutes, stirring occasionally, until the sweet potatoes are fork-tender.
  4. Return the cooked ground turkey to the skillet and mix well. Let it simmer for 3-5 minutes, allowing the flavors to meld together.
  5. Remove from heat and sprinkle with fresh parsley or cilantro for garnish. Serve warm and enjoy!
