- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 small bell pepper, diced (optional)
- 2 tbsp olive oil
- 2 tbsp tomato paste
- ½ cup chicken broth
- 1 tsp paprika
- ½ tsp cumin
- ½ tsp salt (or to taste)
- ¼ tsp black pepper
- Fresh parsley or cilantro, for garnish
Instructions
- Heat 1 tbsp olive oil in a large skillet over medium heat. Add the ground turkey, season with salt, black pepper, and cumin, and cook until browned. Once cooked, remove from the skillet and set aside.
- In the same skillet, add the remaining 1 tbsp olive oil and sauté the diced onion and bell pepper for about 2-3 minutes, until softened. Add the minced garlic and cook for another 30 seconds.
- Add the diced sweet potatoes, chicken broth, tomato paste, and paprika, stirring well to coat everything. Cover and cook for 10-15 minutes, stirring occasionally, until the sweet potatoes are fork-tender.
- Return the cooked ground turkey to the skillet and mix well. Let it simmer for 3-5 minutes, allowing the flavors to meld together.
- Remove from heat and sprinkle with fresh parsley or cilantro for garnish. Serve warm and enjoy!
