1 pound ground turkey

1 cup white rice (uncooked)

2 carrots, diced

2 celery stalks, diced

1 onion, chopped

3 cloves garlic, minced

6 cups chicken broth

1 teaspoon dried parsley

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper


Instructions

1. Heat olive oil in a large pot over medium heat. Add chopped onions, carrots, and celery. Cook for 5–7 minutes until the vegetables soften.

2. Add ground turkey, breaking it up as it browns. Cook until fully cooked through, about 6–8 minutes.

3. Stir in minced garlic, salt, pepper, and dried parsley. Cook for 1–2 minutes until fragrant.

4. Pour in chicken broth and bring the soup to a gentle boil.

5. Add uncooked white rice. Reduce heat to a simmer, cover, and cook for 15–20 minutes until rice is tender.

6. Taste and adjust seasoning as needed. Add more broth if soup thickens too much.

Notes

If using cooked rice, stir it in at the end to prevent mushiness.

Rinse uncooked rice before adding to remove excess starch.
