Ingredients
Scale
- 1 lb ground beef (85% or 90% lean)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 tbsp unsalted butter
- 1 tbsp all-purpose flour
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1/2 cup sour cream
- 12 oz egg noodles
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Noodles: Bring a large pot of salted water to a boil. Cook egg noodles according to package instructions until al dente. Drain, toss with butter, and set aside.
- Brown the Ground Beef: In a large skillet over medium-high heat, cook the ground beef until browned. Drain excess grease and set aside.
- Sauté the Vegetables: Melt butter in the same skillet. Add onions and cook until soft. Stir in garlic and mushrooms, cooking until mushrooms are tender.
- Make the Sauce: Sprinkle flour over the mushrooms and stir to coat. Gradually pour in beef broth while stirring to avoid lumps. Add Worcestershire sauce, Dijon mustard, salt, and black pepper. Simmer for 3-5 minutes until slightly thickened.
- Combine Everything: Return the beef to the skillet and stir. Reduce heat to low and mix in sour cream until fully incorporated. Do not boil.
- Serve: Plate the cooked noodles and spoon the beef stroganoff over the top. Garnish with fresh parsley and enjoy!
