  • 4 boneless, skinless chicken breasts
  • 1 cup salsa verde
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • Salt and black pepper to taste
  • 4 slices of pepper jack cheese
  • Fresh chopped cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Pat chicken breasts dry and rub with olive oil.
  2. Season with garlic powder, onion powder, cumin, salt, and pepper.
  3. Let chicken sit at room temperature for 15–20 minutes.
  4. Preheat grill or grill pan to medium-high heat and oil the grates.
  5. Grill chicken for 5–6 minutes per side until internal temperature reaches 165°F.
  6. In the last 2 minutes of grilling, spoon salsa verde over each breast and top with cheese.
  7. Close lid and cook until cheese is melted.
  8. Let rest for 5 minutes after grilling.
  9. Garnish with chopped cilantro and a squeeze of lime before serving.
