Ingredients
- 2 cod fillets (6 oz each)
- 1.5 cups cherry tomatoes
- 1/2 cup heavy cream
- 2 tablespoons fresh dill, chopped
- 1 clove garlic, minced
- 1 tablespoon butter
- 1 tablespoon olive oil (plus more for grilling)
- Zest of 1 lemon
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss cherry tomatoes with olive oil, salt, pepper, and a pinch of dill. Roast for 20–25 minutes until blistered.
- In a saucepan, melt butter and sauté minced garlic for 1 minute.
- Add heavy cream and lemon zest. Simmer gently for 5–7 minutes to reduce slightly.
- Stir in chopped dill, season with salt and pepper. Keep warm.
- Pat cod dry. Rub with olive oil, salt, pepper, and lemon zest.
- Grill over medium-high heat, 3–4 minutes per side, until opaque and flaky.
