Grilled Chicken

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper

Sweet Potato Fries

  • 2 medium sweet potatoes, peeled and cut into thin fries
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • Salt and freshly ground black pepper

Tzatziki Sauce

  • 1 cup Greek yogurt
  • ½ cucumber, grated and squeezed
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill or parsley, chopped
  • Salt and pepper

Bowl Assembly

  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • Fresh herbs for garnish

Instructions

  1. Marinate the Chicken:
    In a bowl, whisk olive oil, lemon juice, garlic, oregano, salt, and pepper. Coat chicken and marinate for 30 min to 2 hours.

  2. Prepare the Sweet Potato Fries:
    Preheat oven to 425°F (220°C). Pat sweet potato fries dry. Toss with olive oil, paprika, garlic powder, salt, and pepper. Arrange on a baking sheet.

  3. Bake the Sweet Potato Fries:
    Bake for 20–25 min, flipping halfway through, until crispy and golden.

  4. Grill the Chicken:
    Preheat grill or grill pan over medium-high heat. Grill chicken 5–6 min per side until cooked through (internal temp 165°F/74°C). Let rest for 5 min, then slice.

  5. Make the Tzatziki:
    Mix Greek yogurt, cucumber, garlic, olive oil, lemon juice, dill, salt, and pepper. Refrigerate for 15+ min.

  6. Assemble the Bowl:
    Layer greens in bowls. Top with grilled chicken, sweet potato fries, cherry tomatoes, and a scoop of tzatziki. Garnish with fresh herbs and serve.
