Ingredients
2 boneless, skinless chicken breasts
1 tablespoon olive oil
1/2 teaspoon garlic powder
Salt and freshly ground black pepper, to taste
1 large head romaine lettuce, chopped and washed
1 cup cherry tomatoes, halved
1/2 cup freshly grated Parmesan cheese
1 cup croutons
Caesar dressing, to taste
Lemon wedges, optional for serving
Instructions
1. Pat the chicken breasts dry and rub them with olive oil. Season with salt, pepper, and garlic powder. Let rest 10–15 minutes.
2. Heat a grill or grill pan over medium-high heat. Grill chicken for 6–7 minutes per side or until internal temperature reaches 165°F. Let rest 5 minutes.
3. Wash and thoroughly dry romaine lettuce. Chop into bite-sized pieces. Halve cherry tomatoes and grate Parmesan.
4. In a large bowl, toss lettuce with a small amount of Caesar dressing. Add tomatoes, croutons, and most of the Parmesan. Toss again.
5. Slice the rested grilled chicken into strips. Arrange on top of the salad.
6. Drizzle additional dressing and sprinkle remaining Parmesan on top. Serve with lemon wedges if desired.
Notes
Dry your lettuce completely before tossing with dressing to prevent sogginess.
