Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 garlic cloves, minced (for marinade)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1/2 cup Greek yogurt or mayonnaise
  • 1/4 cup heavy cream or half-and-half
  • 2 garlic cloves, minced (for sauce)
  • 1 tbsp lemon juice (for sauce)
  • 2 tbsp chopped fresh parsley

Instructions

  1. In a bowl, mix olive oil, lemon juice, garlic, salt, pepper, and smoked paprika.
  2. Cut chicken into bite-sized chunks and toss in the marinade. Cover and refrigerate for 30 minutes to 2 hours.
  3. Preheat grill or grill pan to medium-high heat. Lightly oil the grates.
  4. Thread chicken onto skewers or place directly on the grill.
  5. Grill chicken for 10–12 minutes, turning every few minutes until charred and cooked through (internal temp 165°F).
  6. While chicken cooks, prepare the sauce: combine yogurt or mayo, garlic, lemon juice, heavy cream, and a pinch of salt in a small saucepan.
  7. Warm sauce over low heat, stirring until smooth. Do not boil.
  8. Serve grilled chicken with a generous drizzle of garlic sauce. Sprinkle fresh parsley on top.
