Description

Greek Chicken Souvlaki is a flavorful, juicy grilled chicken dish marinated with olive oil, lemon, garlic, and herbs.   • 2 lbs boneless, skinless chicken breasts or thighs, cut into 1.5-inch chunks
  • 1/4 cup extra virgin olive oil
  • 3 tbsp fresh lemon juice
  • 3 garlic cloves, minced
  • 1 tbsp red wine vinegar
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • Optional: chopped parsley, lemon wedges, tzatziki, pita, red onions, tomatoes, lettuce

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, garlic, vinegar, oregano, thyme, paprika, salt, and pepper.
  2. Add chicken chunks to the bowl and toss to coat evenly. Cover and refrigerate for at least 1 hour or overnight.
  3. If using wooden skewers, soak them in water for 30 minutes. Thread marinated chicken onto skewers.
  4. Preheat grill or grill pan over medium-high heat. Lightly oil the surface.
  5. Grill the chicken skewers for 10–12 minutes, turning occasionally, until nicely charred and cooked through (internal temp 165°F).
  6. Let rest for 3–5 minutes, garnish with parsley and serve with lemon wedges and desired sides.
