For the Cookie Dough:
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 cup brown sugar
- 1 large egg
- 2 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup mini Reese’s Pieces
- 1/2 cup semi-sweet chocolate chips
For the Cheesecake Filling:
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
For Drizzling (Optional):
- 1/4 cup semi-sweet chocolate chips, melted
Instructions
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth. Scoop teaspoon-sized portions, roll into balls, and freeze for at least 30 minutes.
- In a large mixing bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined. Fold in the Reese’s Pieces and chocolate chips.
- Scoop a tablespoon of dough and flatten it. Place a frozen cheesecake ball in the center and wrap the dough around it, sealing the edges. Repeat with the remaining dough and filling.
- Arrange the cookies on prepared baking sheets, spacing them 2 inches apart. Bake for 10-12 minutes, until the edges are golden but the centers are soft.
- Cool for 5 minutes on the baking sheet, then transfer to a wire rack. Drizzle with melted chocolate if desired. Serve warm or at room temperature.
