Ingredients

5 hard-boiled eggs, chopped

1 large ripe tomato, diced

1/4 cup red onion, finely chopped

1 sleeve saltine crackers (about 3540 crackers), crushed

1/2 cup mayonnaise

1 tablespoon fresh dill, chopped (optional)

Salt and black pepper, to taste

Optional: crumbled bacon, diced pickles, hot sauce, chopped chives or parsley


Instructions

1. Boil the eggs if not already prepared. Cool, peel, and chop them roughly.

2. Dice the tomato and finely chop the red onion and fresh herbs. Set aside.

3. Crush the saltine crackers with your hands into bite-sized pieces just before mixing.

4. In a large mixing bowl, combine the chopped eggs, tomatoes, onions, and optional herbs.

5. Gently fold in the crushed crackers to preserve their crunch.

6. Add mayonnaise and mix gently until evenly coated. Season with salt and pepper.

7. If desired, mix in optional ingredients like bacon, pickles, or hot sauce.

8. Serve immediately for best texture, or chill briefly for 15–30 minutes max.


Notes

Always crush and mix crackers right before serving to keep them from going soggy.

Ripe but firm tomatoes offer the best flavor without excessive moisture.

Duke’s mayo gives the most authentic Southern flavor, but any quality full-fat mayo works.
