Ingredients
- 12 oz rigatoni pasta
- 1 lb garlic sausage (Italian-style or your favorite kind)
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 2 tbsp butter
- 1 1/2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- Salt and black pepper to taste
- 2 tbsp chopped fresh parsley
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook the rigatoni until al dente. Reserve 1 cup of pasta water, then drain and set aside.
- Brown the Sausage: In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned and cooked through, about 6–8 minutes. Remove and set aside.
- Sauté Garlic: In the same skillet, melt butter and add minced garlic. Cook for 30 seconds until fragrant.
- Make the Sauce: Reduce heat and pour in heavy cream, stirring to combine. Let simmer for 5 minutes, then stir in Parmesan cheese gradually. Season with salt and pepper.
- Combine: Return sausage to the pan and add cooked rigatoni. Toss gently to coat. Add pasta water if sauce needs thinning.
- Finish and Serve: Sprinkle with chopped parsley and serve hot with extra Parmesan on top.
