  • 4 boneless, skinless chicken breasts or thighs
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/3 cup freshly grated parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh chopped parsley (for garnish)

Instructions

  1. In a mixing bowl, whisk together olive oil, minced garlic, lemon juice, Italian seasoning, salt, and pepper. Stir in the grated parmesan cheese.
  2. Pat the chicken dry and place in a zip-top bag or shallow dish.
  3. Pour the marinade over the chicken, ensuring all pieces are well coated.
  4. Marinate in the refrigerator for at least 30 minutes, up to 12 hours.
  5. Preheat grill or grill pan to medium-high heat and lightly oil the grates.
  6. Grill the chicken for 5–7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  7. Remove from grill and let rest for 5 minutes before serving.
  8. Garnish with fresh parsley and a sprinkle of extra parmesan if desired.
