Ingredients

Scale

500g chicken breast or thighs, diced

1 tablespoon olive oil

1 tablespoon butter

3 cloves garlic, minced

1 teaspoon Cajun seasoning

1 teaspoon salt

½ teaspoon black pepper

1 cup heavy cream

½ cup sun-dried tomatoes, chopped

¾ cup freshly grated Parmesan cheese

1 bunch broccolini, trimmed

1 tablespoon olive oil (for broccolini)

1 tablespoon fresh parsley or basil, chopped (optional garnish)

Instructions

1. Cut chicken into bite-sized pieces and pat dry. Season with salt, pepper, and Cajun seasoning.

2. Heat olive oil in a skillet over medium-high. Sear chicken in batches for 3–4 minutes per side until golden and cooked through. Set aside.

3. In the same pan, add more oil if needed and sauté broccolini undisturbed for 2–3 minutes to char. Flip and cook another 2–3 minutes. Remove and set aside.

4. Lower heat to medium. Add butter and garlic, cooking for 30 seconds until fragrant. Stir in sun-dried tomatoes.

5. Pour in heavy cream, bring to a light simmer for 2–3 minutes.

6. Stir in Parmesan cheese and allow the sauce to thicken. Taste and adjust seasoning as needed.

7. Add cooked chicken back into the sauce. Simmer 2–3 minutes to coat.

8. Serve hot with charred broccolini and garnish with parsley or basil.

Notes

Always pat the chicken dry before searing — this gives you that golden crust.

Use freshly grated Parmesan for a smooth, creamy sauce that melts perfectly.

Don’t skip the char on the broccolini — it adds a smoky depth that balances the creaminess.
