1 medium onion, diced

3 cloves garlic, minced

2 tbsp butter

1 tbsp olive oil

2 tbsp all-purpose flour

1 cup vegetable broth

1/2 cup sour cream

1 tsp Dijon mustard

1 tbsp soy sauce

Salt, to taste

Black pepper, to taste

2 tbsp fresh parsley, chopped


Instructions

1. Prepare your ingredients by slicing the mushrooms, dicing the onion, and mincing the garlic.

2. Heat butter and olive oil in a large skillet over medium-high heat.

3. Add mushrooms and cook until golden brown and their moisture has evaporated.

4. Lower heat to medium and add diced onion. Cook until soft and translucent.

5. Stir in garlic and cook for 1 minute until fragrant.

6. Sprinkle flour over the mixture and stir well to coat everything evenly.

7. Slowly pour in vegetable broth while stirring to form a smooth sauce.

8. Add Dijon mustard and soy sauce. Let the sauce simmer for 5–7 minutes.

9. Reduce heat to low and stir in the sour cream. Do not boil.

10. Season with salt and pepper, then garnish with chopped parsley and serve.


Notes

Always sauté mushrooms in batches to avoid steaming and ensure browning.

Add sour cream off the heat to prevent curdling.
