  • 2 boneless skinless chicken breasts
  • 2 cups cherry tomatoes (whole or halved)
  • 2 cups broccoli florets
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon butter (or substitute)
  • 2 tablespoons fresh herbs (parsley, basil, or a mix), chopped
  • Salt and pepper to taste
  • Optional: 1 tablespoon lemon juice

Instructions

  1. Prepare the chicken by slicing or pounding to even thickness. Season both sides with salt, pepper, and half of the chopped herbs.
  2. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear the chicken for 4–5 minutes per side, until golden brown and cooked through. Remove and keep warm.
  3. In the same skillet, add another tablespoon of olive oil and the butter. Sauté the garlic until fragrant.
  4. Add the cherry tomatoes and cook for 4–5 minutes until they start to blister and release juices.
  5. While the tomatoes cook, steam the broccoli florets until bright green and just tender (about 4 minutes).
  6. Return the chicken to the skillet with the tomatoes. Spoon the sauce over the chicken and simmer for 2 minutes. Add lemon juice and remaining herbs.
  7. Serve hot with steamed broccoli on the side.
