- 2 boneless skinless chicken breasts
- 2 cups cherry tomatoes (whole or halved)
- 2 cups broccoli florets
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon butter (or substitute)
- 2 tablespoons fresh herbs (parsley, basil, or a mix), chopped
- Salt and pepper to taste
- Optional: 1 tablespoon lemon juice
Instructions
- Prepare the chicken by slicing or pounding to even thickness. Season both sides with salt, pepper, and half of the chopped herbs.
- Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear the chicken for 4–5 minutes per side, until golden brown and cooked through. Remove and keep warm.
- In the same skillet, add another tablespoon of olive oil and the butter. Sauté the garlic until fragrant.
- Add the cherry tomatoes and cook for 4–5 minutes until they start to blister and release juices.
- While the tomatoes cook, steam the broccoli florets until bright green and just tender (about 4 minutes).
- Return the chicken to the skillet with the tomatoes. Spoon the sauce over the chicken and simmer for 2 minutes. Add lemon juice and remaining herbs.
- Serve hot with steamed broccoli on the side.
